With his exceptional expertise and extensive experience, Masaki brings a unique sensibility and unwavering dedication to his culinary creations. Despite his quiet demeanor, his dishes exude deep passion and delicate techniques, maximizing the inherent beauty and flavors of the ingredients to captivate diners.

Taka Murakami

Chef Taka, who brushed up his skills at a Michelin-starred Kappo restaurant “Hassun” in Kyoto, brings delicate techniques and traditional Japanese culinary expertise. His encounter with Seattle’s abundant ingredients and diverse cuisines provides him with new challenges and creative opportunities. Taka’s Dashi (broth) is probably the world-class going beyond everyone's expectation.

Shimi Yutaka Shimizu

Chef Shimi developed his culinary skills at a Teppanyaki restaurant (Steakhouse) in Kobe, run by his father. He further improved his skills by working in a Japanese restaurant in Toronto and at a renowned cuisine Ryokan (Japanese Inn) called “Shoro-tei” in Amanohashidate, Kyoto. His expertise in beef preparation will stir up a new breeze in Seattle's Japanese restaurant industry.

Chef Tak honed his culinary expertise at one of the most famous Kaiseki restaurants in Kyoto “Nakamura-ro.” Afterward, he gained experience as a private chef in Detroit and worked in Hong Kong before arriving in Seattle. His diverse background, skills, and sensibilities from various regions come together, allowing him to showcase his unique charm.

Brian YUNGVICHIT

Brian worked at "I Love Sushi", a Seattle's iconic Sushi restaurant, for 14 years. He honed his Sushi skills under "Tadashi Sato", a legendary figure in Seattle’s Sushi scene. Afterward, he further refined his craft at various Japanese restaurants. Few chefs have mastered the unique techniques of Chef Tadashi as thoroughly as Brian. Recently, Brian joined the chef team at Shomon. With his deep knowledge of Seattle’s Sushi trends, Brian is set to showcase an impressive Seattle-style Edomae Sushi that will even surprise Japanese chefs.
